Recipe - Chicken Tikka Masala

Recipe: Chicken tikka masala

About the dish:
Commonly known as Butter chicken in INDIA, but in UK it’s known as ‘Chicken Tikka Masala’ and it’s one of the favorite dish enjoyed by many. It has been tried and tested by PURI’s many times and is best enjoyed with freshly cooked Naan bread in PURI Tandoors.

2 x medium size cooking onions (thinly sliced in length)
8 x garlic cloves (chopped)
1 x tea spoon ginger paste
5 x chopped tomatoes
5 x tea spoons of unmelted butter ghee
2 x chicken thighs roasted in PURI Tandoors
8 x chicken breast cut in pieces roasted in PURI Tandoors
10 x almonds soaked in cup of water overnight
10 x cashew nuts soaked in cup of water overnight
¼ tea spoon turmeric powder
1 x table spoon coriander powder
1 inch stick of cinnamon
Seeds from 2 pods of green cardamom
Salt & chopped green chilies according to taste
Coriander leaves to garnish

Roast chicken in PURI Tandoors.
Discard water and grind almonds & cashew nuts in a grinder to paste texture by adding 10ml milk.

Add unmelted butter ghee in a wok (cooking vessel) and wait for it to get hot. Add Onions, garlic cloves, ginger paste, almond & cashew nut paste & stick of cinnamon. Stirring frequently, roast the mixture until brown.
Add chopped tomatoes, salt, chilies, coriander powder and turmeric powder. Roast tomatoes until cooked. You will have to stir it frequently as tomatoes will take longer to cook.
Add roasted chicken and 100 ml double cream. Cook it in simmer heat for 15-20 minutes. Put coriander leaves on top and put the lid of wok for another 10 minutes.
Serve chicken tikka masala with freshly cooked naan bread..
